The concept behind Nearly Raw Foods began several months ago. A number of lifestyle changes caused my scale to start tipping - in the wrong direction. I had to do something, and fast.
Like many of us, I went straight for the internet, searching for any and all information on nutrition and exercise. The conclusion I came to was that a vegetarian/vegan diet based primarily on whole, raw foods was the best way to achieve a healthy lifestyle. Sounds great, right? Just eat lots of raw fruits and vegetables, limit/eliminate processed foods, exercise, and you have your ticket to health, right?
WRONG!! Did I mention I have two teenage boys at home? Yes, and these teenage boys have a list of favorite foods: nachos, cheese quesadillas, enchiladas, macaroni and cheese, taquitos... see a trend here? You can imagine their reaction when I start putting veggies rolled up in green leaves in front of them at dinner time. My youngest started saying, "Can't I just have something cooked?" My new method of cooking, or rather, un-cooking, was not winning the boys over.
Nearly Raw Foods is born. Through lots of trial and even more error, I found some ways to make recipes that even the most carnivorous teenage boy can enjoy. The recipes are not Raw, but they do incorporate some of the fundamentals of raw un-cooking as a way to get the health benefits of a raw diet.
Did I mention this stuff is GOOD?
